Red Velvet Pancakes

Pancake Tuesday never looked so good with our red velvet pancakes. This recipe is super simple and we used all SweetStamp products to make it colourful and sparkle!
Pancake Tuesday/Mardi Gras/Shrove Tuesday/Fat Tuesday (whatever you like to call it, its still a day of pancakes - love) is a Christian tradition but celebrated by countries all over the globe and marks the start of Easter/Lent (Ash Wednesday). People all over the world enjoy ‘one last treat’ before giving it up for Lent. It’s basically another excuse to make Pancakes, not that we needed one!
We wanted to create a super easy and fun way to make pancakes. Our perfect pancake ingredients included dairy-free & egg-free products, and we have given vegan friendly alternatives for decorating so you don’t miss out on all the fun.
Let's dive in!
Step 1:
Put 225g of Super White SweetMelts™ & 75g single cream in a bowl and melt in the microwave for 1 minute (you can use dairy-free chocolate buttons & buttercream as an alternative). Then place in the fridge and let it set (this makes ganache).
(Sweet Melts are not suitable for vegans)
Step 2:
Peel medium banana and cut into pieces. Add banana to the blender. Add 1 cup / 240ml of non-dairy milk & add 1 tablespoon of red food colouring into the blender & blend.
Step 3:
Add 1 + ½ cup of plain flour to the mix.
Add 1 tablespoon of baking powder.
Add ¼ tablespoon of baking soda (bicarbonate of soda).
Add 1 tablespoon of cocoa powder & 2 tablespoons of oil.
Add 2 tablespoons of sugar & ½ teaspoon of salt.
Blend all ingredients together (if you find the ingredients are not blending or clumping together, add small amounts of your milk alternative to loosen the mixture & blend).
Step 4:
Heat butter (or dairy-free butter) or oil on a frying pan / hot plate. We suggest you leave on a low heat for a longer period so that the red coloring doesn’t fade.
Use your scooper to scoop out the pancake mix. Let cook for 5-8 minutes and flip to the other side.
This recipe will make 8 - 10 pancakes, depending on size.
Step 5:
Take the ganache out of the fridge (we should warn you, this ganache is so good, it's like a creamy milky bar).
Stack pancakes as desired.
We went with a stack of 5 pancakes - one pancake & 1 - 2 tablespoon of the ganache between them so you can create a colourful (& tasty) stacked effect.
Spread the ganache evenly & leave a layer of ganache on top for decorating
Step 6:
Add some Halo Sprinkles -Ruby’s Revenge (not suitable for vegans) on the top of the ganache. We used a cake topper and created a stamp using our Outboss Expression ‘Made With Love’. The text was painted with a 0.3 SweetStamp Brush (for the fine detail) & SweetStamp Glamorous Gold edible paint (not suitable for vegans).
